The Pas Opere Millesimato is made using the traditional method of sparkling wine production, which involves a secondary fermentation in the bottle. The wine is a blend of Chardonnay and Pinot Noir grapes, which are carefully selected from the best vineyards in the region. The grapes are hand-harvested and then gently pressed to extract the juice, which is then fermented in stainless steel tanks. After the first fermentation, the wine is bottled with a small amount of yeast and sugar, which triggers the secondary fermentation. The wine is then aged on its lees for at least 36 months, which gives it its unique flavour and complexity.

The Pas Opere Millesimato has a pale straw colour with a fine and persistent perlage.
