Sogen Shuzo is a Japanese sake brewery that has been producing high-quality sake for over 300 years. Located in the town of Nishiyama, in the Hyogo prefecture, the brewery is renowned for its Sword of Samurai Junmai sake, which is made using traditional methods and high-quality ingredients. The Sword of Samurai Junmai sake is a premium sake that is made using only the finest Yamada Nishiki rice, which is known for its high starch content and delicate flavor. The rice is polished to 60% of its original size, which removes the outer layer of the rice and leaves only the purest and most flavorful part of the grain. The sake is then brewed using traditional methods, which involve fermenting the rice with koji mold and yeast.

Tasting notes

An ultra-clean junmai sake, rich and well-structured, in pure Noto Toji style. A remarkably expressive nose, marked by fruity aromas of banana and pear, with hints of cereal and lactic notes.

On the palate, the fruity sensations sensed on the nose are clearly present, accompanied by good acidity and rich umami. The structure is limpid and lively.

The wine then develops notes of ripe fruit, figs and dried apricots. The finish is long, punctuated by a lovely bitterness that adds plenty of freshness.

Cocktail Recipe

Samurai's Blade

Ingredients:
- 60 ml Sogen Shuzo Sword of Samurai Junmai
- 15 ml yuzu juice
- 15 ml honey syrup
- 2 dashes of orange bitters
- 1 slice of fresh ginger

Instructions:
1. In a shaker, muddle the fresh ginger.
2. Add the Sogen Shuzo Sword of Samurai Junmai, yuzu juice, honey syrup, and orange bitters.
3. Fill the shaker with ice and shake vigorously for 10-15 seconds.
4. Strain the mixture into a chilled coupe glass.
5. Garnish with a slice of fresh ginger and serve.
