Enoki Shuzo is a Japanese sake brewery that has been producing high-quality sake for over 150 years. Located in Hiroshima prefecture, which is known for its high-quality rice and water, two essential ingredients in sake production, Enoki Shuzo is renowned for its Hanahato Kijoshu, an aged sake that has been matured for eight years. This premium sake is made using Yamadanishiki rice, which is polished to 60% of its original size to remove impurities and allow for a cleaner, more refined flavour. The sake is then brewed using traditional methods, including the use of a wooden press, and aged for eight years in wooden barrels. This ageing process allows the sake to develop a complex flavour profile, with notes of caramel, dried fruit, and nuts.

Hanahato Kijoshu is best enjoyed on its own or paired with rich, flavourful dishes such as grilled meats or cheese. Its unique flavour profile and long ageing process make it a highly sought-after sake that is sure to impress even the most discerning sake connoisseur. Hanahato's Enchanted Forest

Ingredients:
- 60ml Enoki Shuzo Hanahato Kijoshu 8yrs
- 30ml fresh apple juice
- 15ml honey syrup
- 10ml lemon juice
- 2 dashes of Angostura bitters
- 1 sprig of fresh rosemary

Instructions:
1. In a shaker, combine the Enoki Shuzo Hanahato Kijoshu 8yrs, fresh apple juice, honey syrup, lemon juice, and Angostura bitters.
2. Fill the shaker with ice and shake vigorously for 10-15 seconds.
3. Strain the mixture into a chilled glass filled with ice.
4. Garnish with a sprig of fresh rosemary and serve.
