Description

Heavensake is a renowned producer of Junmai Ginjo Hakkushika Azul Sake, a traditional Japanese rice wine that has gained popularity worldwide. With a rich history and a commitment to quality, Heavensake has established itself as a leading producer in the sake industry.

The origins of Heavensake can be traced back to the Hakkushika brewery, which was founded in 1662 in the Nada region of Japan. Nada is known for its pristine water source, which is essential for producing high-quality sake. The brewery has been passed down through generations, with each successor adding their own expertise and innovation to the production process.

Heavensake takes pride in its traditional brewing methods, which have been refined over centuries. The production of Junmai Ginjo Hakkushika Azul Sake begins with carefully selected Yamada Nishiki rice, which is known for its superior quality. The rice is polished to remove the outer layers, resulting in a pure and refined product. The polished rice is then washed and soaked before being steamed to perfection.

Once the rice is ready, it is mixed with koji, a special type of mold that helps convert the rice starches into fermentable sugars. This mixture is then fermented with yeast, which transforms the sugars into alcohol. The fermentation process is closely monitored to ensure optimal flavor development and balance.

After fermentation, the sake is pressed to separate the liquid from the solids. This process is done using traditional methods, such as using a wooden press, to preserve the delicate flavors and aromas. The resulting liquid is then aged to further enhance its complexity and depth.

Junmai Ginjo Hakkushika Azul Sake is characterized by its smooth and refined taste. It has a delicate aroma with hints of floral and fruity notes. The sake has a clean and crisp finish, making it a versatile choice for pairing with a wide range of cuisines.

Heavensake is dedicated to producing sake that reflects the rich traditions of Japanese culture while embracing modern techniques. The brand has gained recognition for its commitment to quality and innovation, earning numerous awards and accolades.

In addition to Junmai Ginjo Hakkushika Azul Sake, Heavensake also offers a range of other sake varieties, each with its own unique characteristics. From Junmai Da
