At a time when sake is understood through the technical information provided by brewers, Koï remains highly mysterious, with no information revealed about its technical characteristics, the yeasts used or the degree of polishing of the rice.

The only thing that is certain is that it is a Junmaï Daïginjo, and you have to trust that you can discover this cuvée with your eyes closed. A fruity, clean and straightforward Daïginjo, in the purest tradition of tanrei karakuchi from the Niigata region.

Cocktail Recipe

Koi Blossom

Ingredients:
- 60 ml Imayo Tsukasa Shuzo Koi Junmai Daiginjo
- 15 ml elderflower liqueur
- 15 ml fresh lemon juice
- 7.5 ml honey syrup
- 1 dash lavender bitters
- Edible flower for garnish

Instructions:
1. In a shaker, combine Imayo Tsukasa Shuzo Koi Junmai Daiginjo, elderflower liqueur, fresh lemon juice, honey syrup, and lavender bitters.
2. Fill the shaker with ice and shake vigorously for 10-15 seconds.
3. Strain the mixture into a chilled coupe glass.
4. Garnish with an edible flower and serve. Enjoy the delicate floral notes of this elegant cocktail.
