Yamanashi Meijo is a renowned sake brewery located in the Yamanashi prefecture of Japan. The brewery has a rich history dating back to the 17th century when it was founded by the Ogasawara family. The brewery has been passed down through generations and is now run by the 11th generation of the family.

Shichiken is one of the most popular sake brands produced by Yamanashi Meijo. The name Shichiken means "seven virtues" in Japanese and is a reference to the seven virtues of the samurai. The brewery takes great pride in producing sake that embodies these virtues.

Furinbizan Junmai is a premium sake produced by Yamanashi Meijo under the Shichiken brand. Junmai is a type of sake that is made only from rice, water, yeast, and koji. Furinbizan Junmai is made using locally grown Yamada Nishiki rice, which is known for its high quality and is often used in premium sake production.

Tasting notes

A clear, limpid sake with light silver-gold highlights. The nose is lively and fruity, evoking citrus fruits, green bananas, almonds and cereals. A relatively powerful nose for a Junmaï sake.

On the palate, it bears the hallmark of Yamanashi Meijo's sakes: the quality of the water. Fluid and thirst-quenching, it reveals notes of fruit and citrus, which evolve into lactic and cereal sensations.

Good acidity and tension. The finish is clean, spicy and lemony, punctuated by a delicate, pleasant bitterness.

Cocktail Recipe

Shichiken Blossom

Ingredients:
- 60 ml Yamanashi Meijo Shichiken Furinbizan Junmai
- 30 ml elderflower liqueur
- 15 ml lemon juice
- 15 ml simple syrup
- 1 dash orange bitters
- Edible flower for garnish

Instructions:
1. Fill a cocktail shaker with ice.
2. Add Yamanashi Meijo Shichiken Furinbizan Junmai, elderflower liqueur, lemon juice, simple syrup, and orange bitters.
3. Shake vigorously for 10-15 seconds.
4. Strain into a chilled coupe glass.
5. Garnish with an edible flower.
