Domaine des Baumard is a renowned wine producer located in the heart of the Loire Valley in France. The estate has a long history dating back to the 17th century when it was founded by the Baumard family. Today, the estate is run by the current owner, Florent Baumard, who has continued the family tradition of producing exceptional wines.
The vineyards of Domaine des Baumard are located in the Anjou and Savennières appellations, which are known for producing some of the finest white wines in the Loire Valley. The estate is particularly famous for its Chenin Blanc wines, which are made from grapes grown on the steep slopes of the Savennières appellation. The distillery produces a range of Cognacs, including VS, VSOP, and XO. The Cognacs are made using a combination of Ugni Blanc and Colombard grapes, which are grown in the Grande Champagne and Petite Champagne appellations. The grapes are harvested by hand and then fermented using natural yeasts. The wine is then distilled twice in copper pot stills to produce a high-quality eau-de-vie.
The eau-de-vie is then aged in oak barrels for a minimum of two years, although some of the higher-end Cognacs are aged for up to 30 years. The aging process gives the Cognacs their characteristic flavors of vanilla, caramel, and oak. The Cognacs are then blended to create a consistent flavor profile across each of the different expressions.
